Why This Recipe Works

Just when I think I couldn’t possibly create a tastier, more comforting dish, this delicious little casserole pops up in my life. I came across this recipe at southernliving.com and knew I had to recreate it.

I had high hopes because, I mean, look at it! Beef and noodles and creamy cheeses all swimming together in the same dish? That’s my version of heaven, folks.

So my hopes were high and this recipe proved to be even more delicious that I’d imagined. It became one of those dishes that I ate for breakfast, lunch and dinner until it was gone. It is total comfort in a pan. Savory, cheesy, hearty and I couldn’t resist adding green chiles for a little punch of spice.

This meal will quickly become a family favorite. It’s a great dish to freeze and use at a later date and it is also the perfect option to bring to a family who needs a night off from cooking.

How To Make Homestyle Ground Beef Casserole

Step 1

Cook a 12-ounce package of egg noodles according to package directions, but cut it short 2 minutes shy of being al dente. Drain and rinse and add back to the pan. Add 8 ounces of sour cream, 3 ounces of cream cheese and a 4-ounce can of diced green chiles to the noodles.

Stir gently until combined. Spread evenly into the bottom of a lightly greased 13 x 9 baking dish.

Step 2

Preheat oven to 350 degrees F. Cook 1 pound of ground beef in a large skillet over medium heat until no longer pink; drain. Add two cans of Rotel tomatoes, a 6-ounce can of tomato paste, 1 teaspoon each of Italian seasoning and seasoned salt.

Cook for 3 minutes, stirring occasionally. Pour the mixture evenly over the noodles in baking dish.

Step 3

On top of the beef mixture, sprinkle cheddar, Parmesan and Mozzarella cheeses, in that order. Cover tightly with foil and bake in the preheated oven for 30 to 35 minutes. Uncover and bake 5 more minutes. Spoon the noodle mixture onto plates and serve immediately!

Recipe Notes

  • The can of diced green chiles adds such a delicious little punch to this casserole, but if you prefer to keep it on the mild side simply omit this ingredient!
  • Replace one of the cans of diced tomatoes with an equal amount of tomato sauce for a creamier dish.
  • There are four types of cheese in this recipe! FOUR! YUM! I love tasting all of them in the dish, but if you are wanting to simplify the cheese situation feel free to use either Mozzarella or cheddar cheese instead of using both.
  • Feel free to replace the beef with ground chicken, turkey or even pork!
  • 15 minutes before serving, whip up a batch of garlic or cheese bread to serve alongside the dish.

How To Freeze A Casserole

If you want to freeze a casserole for later use, you have a couple options:

  • Freeze unbaked – Assemble the layers as directed in an aluminum baking pan and wrap tightly in foil. Place into resealable freezer bags and freeze for 3-4 months. When you are ready to enjoy the casserole, let it thaw completely (preferably in the fridge overnight) and bake as directed on the recipe.
  • Freeze baked – Assemble the layers and bake as directed in an aluminum baking pan. Let the casserole cool completely and wrap tightly in foil. Place into resealable freezer bags and freeze for 3-4 months. When you are ready to enjoy the casserole, let it thaw completely (preferably in the fridge overnight). Reheat in a 250 degree F oven uncovered for 10-15 minutes or until heated through.

Do I Need To Cover My Casserole

There is no hard and fast rule for whether or not a casserole should be covered with foil during baking. All recipes differ, but here are some things to consider when deciding whether or not to cover your baking dish.

Covering a dish during the baking process traps in moisture and keeps ingredients from getting crispy or burnt. If the dish contains exposed noodles or bread or something that may burn or dry out easily, then it should be covered for a majority of the cook time.

Also, if the recipe contains uncooked rice, pasta or grains, it is important to cover the pan in order to trap steam inside helping it to cook more quickly and evenly.

Leaving a dish uncovered during baking will ensure that the top layer gets browned and it also aids in reducing liquids inside the dish. If all of the ingredients in the dish are pre-cooked, baking uncovered is recommended.

Ingredients

  • 12 oz egg noodles

Instructions

  • Coat a 9×13 baking dish with cooking spray and set aside. Cook egg noodles in boiling water 2 minutes shy of being al dente. Drain and add sour cream, cream cheese and chiles (if using) to the noodles. Stir gently until combined. spread evenly onto the bottom of the prepared baking dish.

  • Preheat oven to 350 degrees F. Cook ground beef in a skillet over medium heat until no longer pink; drain. Add canned tomatoes, tomato paste, Italian seasoning and seasoned salt. Cook for 3 minutes, stirring. Pour mixture evenly over noodles in baking dish.

  • Top with an even layer of cheddar, Parmesan and Mozzarella, in that order. Cover tightly with foil and bake in the preheated oven for 30 minutes. Remove foil and bake for an additional 10 minutes.
